Beer Stew

Featuring: Blaecorn Unidragon Russian Imperial Stout

2 tablespoons olive oil
1 medium onion, chopped
3 stalks celery, chopped
3 carrots, chopped
3 cloves garlic, minced
1 teaspoon salt
1 teaspoon ground black pepper
2 pounds beef stew meat, cubed
1 (22 oz) bottle of Blaecorn Unidragon
2 oz of water, more as needed
4 medium potatoes, quartered
salt and ground black pepper to taste

Heat the olive oil in a large pot over medium heat. Stir in the onion, celery, carrots, garlic, salt, and pepper. Cook and stir about 5 minutes. Stir in the beef. Let it sear. Add Blaecorn Unidgraon, water and potatoes. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the beef is tender about 2 hours. Be sure to stir occasionally/ adjust heat to prevent burning. Season to taste with salt and pepper before serving. Serve with beer bread!
