Beer Pretzel Caramel

Featuring: Galactica



1 12-ounce bottle Galactica
2 tablespoons unsalted butter, plus more for the dish
1 1/4 cups turbanado sugar
1/4 cup maple syrup
1 cup heavy cream
1 1/2 cups chopped pretzels

Open Galactica and let stand for 1 hour in glass, until bubbles release.
Butter an 8-inch-square baking dish. Boil 6 oz of Galactica in a small saucepan over medium heat; reduced to 2 teaspoons, about 10 minutes.
In larger saucepan, place remaining 6 oz of Galactica, turbanado sugar, maple syrup, cream and butter.
Bring to boil over medium high heat, stirring occasionally to prevent scorching for about 10-15 minutes.
Remove from heat and mix in reduced Galactica and pretzels.
Spread into the greased baking dish and chill for no longer than 1 hour. Cut into pieces or break into chunks.
